Baguettes, pistolets, pains sp\u00e9ciaux, croissants, brioches, craquelins, cramiques&#8230; font partie de la production quotidienne du boulanger \/ de la boulang\u00e8re.<\/p>\n\n\n\n<p>A partir de mati\u00e8res premi\u00e8res (c\u00e9r\u00e9ales, farines, etc.) choisies avec soin, ce \/ cette professionnel(le) r\u00e9alise\u00a0le p\u00e9trissage de la p\u00e2te, sa fermentation, sa mise en forme et enfin la cuisson du pain.\u00a0<\/p>\n\n\n\n<p>Il \/ elle fabrique \u00e9galement d&rsquo;autres sp\u00e9cialit\u00e9s telles que les produits croquants, les tartes, les cakes, etc. De plus, Il \/ elle peut encore \u00e9largir\u00a0son offre en confectionnant des aliments sal\u00e9s\u00a0: quiches, pizzas ou en proposant la vente de sandwichs, confiseries et biscuits.<\/p>\n\n\n\n<p>Lev\u00e9(e) \u00e0 l&rsquo;aube, le \/ la boulanger(\u00e8re) passe sa matin\u00e9e au fournil. La premi\u00e8re fourn\u00e9e doit \u00eatre pr\u00eate pour l&rsquo;ouverture de la boulangerie. Il \/ elle est en permanence au c\u0153ur du processus car la confection de pain exige une attention constante tant pour la technique de p\u00e9trissage que pour le temps d\u00e9di\u00e9 \u00e0 la fermentation. Par exemple, il \/ elle doit aussi tenir compte des conditions m\u00e9t\u00e9orologiques comme facteur de variation dans sa pratique. En effet, un pain peut \u00eatre moins moelleux et croustillant en fonction du degr\u00e9 d\u2019humidit\u00e9 de l\u2019air.\u00a0<\/p>\n\n\n\n<p>La fabrication des pains n\u00e9cessite de renouveler les m\u00eames \u00e9tapes tout au long de la journ\u00e9e\u00a0: p\u00e9trissage de la p\u00e2te, fermentation, fa\u00e7onnage, enfournement, cuisson et d\u00e9fournement. N\u00e9anmoins, gr\u00e2ce \u00e0 la modernisation des \u00e9quipements (p\u00e9trin m\u00e9canique, chambre de fermentation \u00e9lectronique, etc.), le boulanger \/ la boulang\u00e8re peut, plus facilement qu&rsquo;avant, effectuer plusieurs fourn\u00e9es par jour afin de satisfaire sa client\u00e8le tout au long de la journ\u00e9e.<\/p>\n\n\n\n<p>Le \/ la boulanger(\u00e8re) est \u00e9galement un(e) commer\u00e7ant(e) qui sait accueillir sa client\u00e8le, la conseiller en fonction de ses go\u00fbts et s\u2019adapter \u00e0 ses besoins. Ainsi, de plus en plus de boulangers(\u00e8res) se sp\u00e9cialisent dans la confection de pains bio, sans gluten, aux graines afin de satisfaire les clients en recherche d&rsquo;une offre de produits di\u00e9t\u00e9tiques et bio.
